Fall Harvest

Apples are in season.  Take advantage of it.  They are inexpensive, fresh, and come in so many varieties.  If you love apples, stock up!  If you are not a huge apple person, try them again, but maybe in a new way.

Apples are a great portable food.  You can take one anywhere, and they are so affordable.  When I carry an apple with me, I usually carry an apple slicer too.  I do not always feel comfortable in a professional setting to bite into a juicy apple.  I prefer to eat slices.  A slicer is super easy to carry with an apple and I feel that it is easier to eat that way.  A little more lady like perhaps.  And slices of apples are easier to enjoy with a little peanut butter..one of my favorite ways to enjoy a crisp fall apple!

If raw apples aren’t your thing, cook them up.  And I don’t mean in a pie.  Cook up a delicious side dish using beautiful fall apples.  When cooking up a pork roast, toss a baked apple side dish in the oven.  It can be a flavorful healthy side dish.  Here is a great baked apple recipe that I love, and so do my kids.

Baked Apples

  • 6 Apples (your choice) cored and sliced thin
  • 1 T. Lemon Juice
  • 1/2 Cup Oatmeal
  • 2 T. flour
  • 1 1/2 t. cinnamon
  • 3 T. brown sugar
  • 4 T. butter or margarine, melted

Preheat oven to 350. Place apples in shallow baking dish.  Toss with lemon juice.   Mix dry ingredients together.  Stir melted butter into the dry ingredients with a fork until the mixture is crumbly.  Sprinkle over the apples.  Place in oven for 30 minutes.  Serve hot.  If you prefer, you can toss 1/4 cup of raisins over the apples before you put the topping on.

This is a great dish to serve with pork tenderloin or pork roast.  Cheddar cheese is also delicious with both pork and apples.  Make some mac and cheese to finish this meal off.  Now this is fall comfort food!

Baked apples are also delicious at breakfast.  If you are a morning person and motivated to get something in the oven early, go for it.  It’s a great warm breakfast, and the house smells homey.  And it is a good way to start your day with some healthy fiber. So take advantage of the lovely fall apple harvest, fill your home with warm aromas, and enjoy!
