bar food and leftovers

We are busy.  Kids, careers, appointments, and life in general keeps us busy.  As a nutrition professional, I get asked what I eat all the time, and how to eat healthy when time is tight.   Like I am some kind of benchmark for perfect eating habits.  Or always ready to dispense advice.   Um, I like to get away from my job too.  It’s true that I enjoy healthy food and an active life style.  But hey, even I get tired, cranky, and just want to cheat a little with my meals every once in a while.

It’s no secret that I think leftovers are fantastic to have around.  I like leftovers because they can either be a quick meal or a starter for something else great.  Leftover chicken can be eaten by itself or added to some other dish to create something else, like a chicken veggie pasta dish (healthy) or a quesadilla (bar food).  Either way, leftover chicken, or any leftover protein, is great to have in the fridge.  That is why I cook big and try to keep leftovers handy.

I usually try to have extra’s in the fridge or freezer to get a meal together in a snap.  Staples are a must, and by staples, I mean a well stocked pantry.  That leaves the option of then taking one or two fresh things along with leftovers and easily creating something great.  Sometimes leftovers stand alone, sometimes they becomes something else, like bar food.

By bar food, I mean eating something that is not quite a complete meal.  It’s a nibbler, but more filling, and is great for when you are just too exhausted to put a whole meal together.  Sprinkled into a healthy diet, it isn’t all that bad.  Moderation is key.

It happens to be Sunday evening.  This weekend was not particularly, well, rejuvenating.  My busy week carried over to a very busy weekend.  So tonight it is bar food and leftovers.  We have leftover chunky horse radish spread.  Slap it  on bread, add some cheese, pop into a pan and it’s a little grilled cheese.

Next comes a few bites of leftover melon.  Using fingers.  No utensils to wash.  Then a handful of salt free almonds along with a big glass of refreshing ice cold water.  Yum.  Next, a small portion of leftover spaghetti with a tomato vegetable sauce goes in to the microwave for a quick heating.

That’s it.  A little of this, a little of that.   Not ideal, but for a tired mom, this works every now and again.  True confessions…it’s okay to piece together a meal every now and again.

Repurposing

Okay.  So I had some leftovers from the Superbowl.  I will come out right now by saying that I deviated from my usual healthy fare and made bar food.  And since I am mindful of my food budget, I like to repurpose my leftovers.   It’s a little yucky to say that I “recycle” my leftovers.  That makes it sound like I picked through garbage.   I didn’t.  I promise.

I made a batch of cheese fondue for the super bowl.  Cheese fondue is traditionally made with swiss cheese and white wine, as it has its culinary roots in Switzerland.  And that is how I made mine for the get together.  I had ham chunks and sour dough bread as the dippers for the fondue.  It was delicious.  But I had some leftovers.

So I made some cheese soup a few nights later.  I simply tossed the leftover ham in the soup, as well as some other vegetables I had sitting around.  I used a potato, some diced onion, and a tiny bit of celery.  It was a warm and yummy comfort food dish!

I started by putting some olive oil in a large soup pot, and added some celery, garlic, and onions.  I let that sizzle for about 3-4 minutes.  Then I gently added the leftover fondue and stirred it to break it up.  I had it on a medium heat so the cheese would heat gently.  (Burning any dairy product in a pan is a super nasty clean up.  I learned that lesson once!)  I keep chicken and vegetable stock on hand, and grabbed some chicken stock out of the pantry.  I slowly added about 2 cups of that to smooth out the fondue into a soup like consistency.

After this was good and hot, I tossed the leftover ham chunks in.  And some diced a potato and tossed that in as well.  This made a good hearty soup.  And I used up the leftovers beautifully for another meal.  I love making meals from food I already have on hand.  Repurposing leftovers is a great way to use up food in the fridge as well as stretch those dollars!  Yay!  Try it and let me know what you make!

Refrigerator cook

I was recently called a “refrigerator cook”.  Everyone who knows me knows how much I love to cook.  I have taken oodles of cooking classes.  I have attended  all sorts of classes, from Le Cordon Bleu to local celebrity chef classes.  I have been cooking my whole life.  I love food, I love the socializing that happens around meals, I love healthy cooking, and I love bringing family together with celebrations of food.  But a refrigerator cook?  Whats that?

I am told that I have a talent for opening up the refrigerator and pantry and coming up with something fantastic.  Whether it is an appetizer or a whole meal, I seem to be able to pull something yummy together.  And I have a blast doing it.  What let to my label of being a newly crowned refrigerator cook?  Recently, it was my Saturday afternoon football watching bar food.  Here’s what happened.

After a morning of running errands, we came home hungry.  We turned on college football, and unloaded from the errands.  I looked in the fridge to see what I could throw together.  What is better than bar food for a Saturday afternoon?  I pulled out leftover chicken taco meat, cheese, flour tortillas, a can of black beans, some fresh cilantro, salsa, and sour cream.

Next, I pulled my big skillet and put it on the stove.  I warmed up the taco meat in the microwave.  While that was heating, I sliced some delicious cheese and chopped up a bit of cilantro.  I turned the burner on under the pan and sprayed it with non stick cooking spray.  Then I started layering up my quesadillas.  Meat, beans, salsa (not too much or it gets soggy), and cheese.   Into the pan it went with a medium fire under it.  I like to cook my quesadillas slowly so the cheese can really melt!

After a few moments, I took the quesadillas out of the pan and put them onto a cutting board.  They cooled for a moment, then I sliced ’em up.  I put it onto a plate, garnished it with some fresh cilantro, and added a small bit of sour cream.  Yum!  Grab a beer, and a napkin too.  Enjoy that good game with a simple and easy food!  This can also be a great after school snack, or you can add some fruit and make it a nice meal.

I like to keep staples on hand so I can always pull something out to cook quickly.  This takes planning and experience, but anyone can do it.  Now is a great time to start gaining experience!   And the only way to get experience is to get busy.  Get some extra items at the grocery store for the fridge and pantry, and you too can become a refrigerator cook!  How to stock a pantry?  Tune in next time.  I will guide you!
